Wild Rice To-Go Bowl

Buddha bowls are a great way to pack flavorful, plant-based nutrients into a meal. Plus, it's easy to prep, cook, and store the ingredients in your Stasher bowls and bags

Wild Rice Buddha Bowl in a Stasher Bowl

Bowl ingredients:

  • 1 cup wild rice
  • 1 sweet potato
  • 1 tbsp of olive oil
  • 2 handfuls of massaged kale
  • 1/4 red onion
  • 1/4 cup rice vinegar
  • 1 Persian cucumber
  • 1 sliced avocado (optional)

Dressing:

  • 1 Tbsp tahini
  • 1 Tbsp avocado oil
  • 1 Tbsp water
  • 1 tsp honey
  • 1 tsp rice vinegar

Instructions:

Preheat oven to 400 F. Add rice and 2.5 cups of water to 4-Cup Bowl. Cook in microwave at full power for 10 minutes (remember to crack the seal!). Roast sweet potatoes with 1 Tbsp of oil on a cookie sheet or in a Stasher bag. Cook for 25 minutes. Build your bowl starting with the rice and layer up to your cucumbers and avocado. Whisk dressing ingredients together and drizzle over the top to eat right away.

Tip: If meal prepping, pour a side of dressing to your Pocket Bag or 1-Cup Bowl for lunch on-the-go!
